We sat down with our favourite vegan fashionista Amanda Lynn (a.k.a Blueberry Pancake). Blueberry Pancake sits at the intersection between style and health. So we picked her brain on how to live health in style! We loved her ideas and suspect you will as well!
Favourite smoothie recipe?1 banana
1 cup of berries
1 cup of water
1 tbsp of almond butter
2 tbsp of oatmeal
1/2 tsp vanilla extract
juice from half a lemon
Favourite kitchen tool?
I recently got a spiralizer and it has very quickly become my fav tool! It's super easy to use and just as easy to clean after using. You can spiralize veggies for raw salads or bowls. Or use it for potatoes and roast them in the oven. There are so many great recipes online and on Pinterest that it would be difficult to become bored on this tool!
Favourite music to cook to?
I like cooking to bands like Alvvays, Band of Horses, Lykke Li, St.Vincent.
Favourite music to get ready to?
I absolutely love pop music so as of lately I would have to say Taylor Swift. Her latest album is super upbeat and perfect pump up music!
Favourite fashion accessory?
Probably sunglasses. My sunglass selection always shocks people. I think mostly because I only have one pair of eyes. Who could possibly wear all of those? I can.
Your favourite cookbook or online resource?
I don't have a favourite cookbook at the moment. I am an avid Pinterest user, so I would say that is my most used resource for recipes! I have a few go to recipes blogs I visit which are Oh She Glows, Joyous Health, Wholehearted Eats, Beard and Bonnet, Nutrition Stripped.
Dream kitchen item?
For a long time my dream kitchen item was a Vitamix but I was lucky enough to receive one for my birthday last year. Honestly I would have to say my current dream appliance is a dishwasher. I'm always in the kitchen so the dishes never end! It would be a real dream come true to have one of those bad boys. Haha. Coming in second would be a food dehydrator.
Favourite Superfood?
This is a super tricky one to answer! I love and use so many different superfoods on a daily basis. I think I would have to go with any form of coconut (oil, butter, flakes, water) and chia seeds.
